Chimney Rock blend is our take on darker coffee - accentuating the positive aspects of a more developed roast that draws out the sugars to a nice caramelized state without the drawbacks of over roasting. This is coffee that just tastes like really good coffee. It maintains rich, creamy chocolate flavors and presents a bold, hearty brew.
Chimney Rock also delivers a straight-forward, easy to dial chocolaty shot of espresso.
Current components: Guatemala - Finca La Esperanza Brazil - Fazenda Sarrinha
Blind Assessment: Roasty-sweet, lightly chocolate- and nut-toned. Dark chocolate, walnut, peach, freesia-like flowers, lightly scorched fir in aroma and cup. In structure roundly sweet-toned with a hint of savory. Lightly syrupy, buoyant mouthfeel. Fruit and flowers carry lightly into a sweet-toned finish.
Notes: This excellent coffee was recognized as one of the three most exciting non-espresso blends of 2017. This blend of coffees from Mexico and Brazil was designed by the roaster to accentuate the positive potential of a more developed, darker roast profile. It tied for the fourth-highest rating in a tasting of nearly 130 darker-roasted coffees for Coffee Review‘s August 2017 tasting report.
The Bottom Line: Crisply sweet roast-toned blend with a pleasing aromatic range: nut and chocolate with delicate stone fruit and floral complication.
